LITCHI AND AVOCADO SALAD
Recipe:
- 2 ripe avocados, flesh scooped out in chunks
- 24 litchis, peeled
- 1 cup fresh coriander
- 2t fish sauce
- ½ cup soya sauce
- ¼ cup avocado oil
- 1 red chilli, thinly sliced
- 1 green chilli, thinly sliced
- 1 x 5 cm piece ginger, peeled and sliced
- 2 cloves garlic, crushed
- Juice of 2 limes
Description:
- Toss the avocado with the litchis and coriander.
- Drizzle with the dressing and serve.
